Ingredients
  

  • 1 slice Wholemeal
  • 1 piece Avocado
  • 1 piece Egg
  • 0.5 piece Lemon

Instructions
 

  • Toast the bread slices in a toaster or frying pan until golden brown.
  • Meanwhile, prepare the avocado cream. Peel the avocado, put it in a bowl and mash it with a fork until it is golden brown. Add the freshly squeezed lemon juice, salt and pepper to taste and mix well.
  • Spread a thick layer of avocado spread on the toasted bread slices.
  • In a pan, prepare the eggs as you like: fried, soft-boiled or fried.
  • Place the egg on top of the avocado bread.
  • Sprinkle with fresh coriander or parsley and add a few freshly cut tomato slices on top.
  • Season with salt and pepper to taste and serve immediately.
