
Avocado toast with egg and tomato
This avocado toast with eggs and tomatoes can be a healthy, nutritious breakfast, full of fresh flavours and juicy textures
Ingredients
- 1 slice Wholemeal
- 1 piece Avocado
- 1 piece Egg
- 0.5 piece Lemon
Instructions
- Toast the bread slices in a toaster or frying pan until golden brown.
- Meanwhile, prepare the avocado cream. Peel the avocado, put it in a bowl and mash it with a fork until it is golden brown. Add the freshly squeezed lemon juice, salt and pepper to taste and mix well.
- Spread a thick layer of avocado spread on the toasted bread slices.
- In a pan, prepare the eggs as you like: fried, soft-boiled or fried.
- Place the egg on top of the avocado bread.
- Sprinkle with fresh coriander or parsley and add a few freshly cut tomato slices on top.
- Season with salt and pepper to taste and serve immediately.
