Ingredients
  

  • 2 cups Whole wheat flour
  • 1 teaspoon Baking soda
  • 0,5 teaspoon Salt
  • 0,25 cup Coconut oil
  • 0,5 cup Honey
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 3 ripe Banana
  • 0,5 cup Greek yoghurt
  • 0,5 cup Chopped nuts

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners
  • In a large bowl, whisk together the whole wheat flour, baking soda, and salt
  • In a separate bowl, mix the melted coconut oil, honey or maple syrup, eggs, and vanilla extract until well combined
  • Add the mashed bananas and Greek yogurt to the wet ingredients, stirring until smooth
  • Gradually fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix
  • If desired, fold in chopped nuts for added texture and flavor
  • Spoon the batter into the prepared muffin cups, filling each about two-thirds full
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
  • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely
