Ingredients
- 2 cups Whole wheat flour
- 1 teaspoon Baking soda
- 0,5 teaspoon Salt
- 0,25 cup Coconut oil
- 0,5 cup Honey
- 2 large Eggs
- 1 teaspoon Vanilla extract
- 3 ripe Banana
- 0,5 cup Greek yoghurt
- 0,5 cup Chopped nuts
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners
- In a large bowl, whisk together the whole wheat flour, baking soda, and salt
- In a separate bowl, mix the melted coconut oil, honey or maple syrup, eggs, and vanilla extract until well combined
- Add the mashed bananas and Greek yogurt to the wet ingredients, stirring until smooth
- Gradually fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix
- If desired, fold in chopped nuts for added texture and flavor
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
