Ingredients
  

  • 2 cups shredded carrots
  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/3 cup coconut oil melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins or chopped nuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
  • In a large bowl, combine shredded carrots, whole wheat flour, almond flour, rolled oats, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together honey or maple syrup, melted coconut oil, eggs, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. If desired, fold in raisins or chopped nuts.
  • Divide the batter evenly among the muffin cups.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
