- 2 cups shredded carrots
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1/2 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/3 cup coconut oil melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins or chopped nuts optional
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.
- In a large bowl, combine shredded carrots, whole wheat flour, almond flour, rolled oats, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
