Ingredients
  

  • 1 cup long-grain rice
  • 2 cups fresh or frozen green peas
  • 1 piece onion finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • Fresh parsley for garnish

Instructions
 

  • In a large pan, heat olive oil over medium heat. Add finely chopped onions and sauté until translucent.
  • Add rice to the pan and stir, allowing the rice to slightly toast for about 2 minutes.
  • Pour in the vegetable broth and bring to a gentle boil.
  • Reduce the heat to low, cover the pan, and simmer for 15-18 minutes or until the rice is almost cooked.
  • Stir in the green peas, salt, and black pepper. Cover and cook for an additional 5-7 minutes until the peas are tender and the rice is fully cooked.
  • Remove from heat and let it sit, covered, for a few minutes to allow the flavors to meld.
