Ingredients

  • 4 white fish fillets such as tilapia or cod
  • 2 cups mixed vegetables carrots, broccoli, bell peppers, sliced
  • 1 cup jasmine rice
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons ginger minced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Sesame seeds for garnish

Instructions

  • Rinse jasmine rice under cold water and cook according to package instructions.
  • In a bowl, mix soy sauce, rice vinegar, sesame oil, ginger, and garlic to create the marinade.
  • Pat the fish fillets dry and place them in a shallow dish. Pour half of the marinade over the fillets, ensuring they are well-coated. Let them marinate for 10 minutes.
  • Prepare a steamer. Place sliced vegetables on the steaming tray and arrange the marinated fish fillets on top.
  • Steam for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
  • While steaming, heat the remaining marinade in a small saucepan until it thickens slightly.
  • Serve the steamed fish and vegetables on a bed of cooked jasmine rice. Drizzle with the thickened marinade.
  • Garnish with fresh cilantro and sesame seeds before serving.
