Ingredients

  • 2 pounds beef stew meat cubed
  • 1/4 cup all-purpose flour
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 cup red wine optional
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 4 carrots peeled and sliced
  • 4 potatoes peeled and cubed
  • 1 cup frozen peas optional
  • Chopped fresh parsley for garnish

Instructions

  • In a bowl, combine the cubed beef, flour, salt, and black pepper. Toss the beef until evenly coated with the flour mixture.
  • In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Add the coated beef cubes and brown them on all sides. This step enhances the flavor of the stew.
  • Add chopped onions and minced garlic to the pot. Sauté until the onions are translucent and aromatic.
  • If using red wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom.
  • Stir in beef broth, tomato paste, Worcestershire sauce, dried thyme, and bay leaves. Bring the mixture to a simmer.
  • Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours or until the beef becomes tender.
  • Add carrots, potatoes, and frozen peas (if using) to the pot. Continue to simmer until the vegetables are cooked and the stew has reached your desired consistency.
  • Adjust the seasoning with salt and pepper. Remove bay leaves. Garnish with chopped fresh parsley before serving.
  • Ladle the perfect beef stew into bowls. Serve hot with crusty bread or over a bed of mashed potatoes.
