Ingredients
For the Crust:
- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter cold and cubed
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup ice water
For the Filling:
- 6-7 medium-sized apples a mix of sweet and tart varieties, peeled, cored, and thinly sliced
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 tablespoon butter cut into small pieces
For Assembly:
- 1 egg for egg wash
- 1 tablespoon granulated sugar for sprinkling
Instructions
- In a large mixing bowl, combine the flour, sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, flour, and lemon juice until the apples are evenly coated.
- On a floured surface, roll out one disc of the chilled dough to fit a 9-inch pie dish. Place the rolled-out dough into the pie dish and trim any excess hanging over the edges.
- Spoon the prepared apple filling into the pie crust. Dot the filling with small pieces of butter.
- Roll out the second disc of dough and place it over the apple filling. Trim and crimp the edges to seal the pie. Cut a few slits in the top crust to allow steam to escape.
