Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups ground almonds
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup raspberry or apricot jam or your preferred flavor
  • Powdered sugar for dusting

Instructions
 

  • In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well incorporated.
  • In a separate bowl, whisk together the all-purpose flour, ground almonds, and ground cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Do not overmix.
  • Divide the dough in half, shape each portion into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.
  • Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  • On a lightly floured surface, roll out one disk of dough at a time to about 1/8-inch thickness. Use a round cookie cutter to cut out shapes. For half of the rounds, use a smaller cutter to create a window in the center.
  • Place the cookies on the prepared baking sheets and bake for 10-12 minutes or until the edges are lightly golden. Allow them to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  • Spread a thin layer of jam on the whole cookies, leaving the ones with the center cutout plain. Place the cutout cookies on top to create sandwich cookies.
  • Dust the tops of the Linzers with powdered sugar for a finishing touch.
