  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable broth kept warm
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 cup Parmesan cheese grated
  • Salt and black pepper to taste
  • Fresh parsley chopped, for garnish

Instructions
 

  • In a wide, heavy-bottomed pan, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and cook until fragrant.
  • Add Arborio rice to the pan, stirring constantly to coat the grains with oil. Toast the rice for 1-2 minutes until the edges become translucent.
  • Pour in the dry white wine, stirring continuously. Allow the wine to evaporate until the rice absorbs the flavors.
  • Begin adding warm broth one ladle at a time. Stir constantly and allow the rice to absorb the liquid before adding more. Continue this process until the rice is creamy and al dente, which should take about 18-20 minutes.
  • Stir in grated Parmesan cheese, and season with salt and pepper to taste. Continue stirring until the risotto reaches a creamy consistency.
  • Remove the risotto from heat. Garnish with fresh chopped parsley and an extra sprinkle of Parmesan. Serve immediately.
