  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk or 1 cup milk mixed with 1 tablespoon vinegar or lemon juice
  • 1 large egg
  • 2 tablespoons unsalted butter melted
  • Additional butter or oil for cooking

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the buttermilk, egg, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps in the batter are okay.
  • Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
  • Flip the pancake and cook for an additional 1-2 minutes, or until golden brown and cooked through.
