Ingredients
- 10 spring roll wrappers
- 1 cup shredded lettuce
- 1 cup thinly sliced cucumber
- 1 cup matchstick carrots
- 1 cup cooked vermicelli noodles
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup cooked shrimp peeled and deveined (optional)
- Hoisin sauce for serving
- Sweet chili sauce for serving
Dipping Sauce:
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 clove garlic minced
- 1 teaspoon grated ginger
- 1 tablespoon chopped green onions
Instructions
- Prepare the dipping sauce by whisking together soy sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, and chopped green onions in a small bowl. Set aside.
- Fill a shallow dish with warm water. Dip one spring roll wrapper into the water for about 15-20 seconds until it softens.
- Lay the softened wrapper flat on a clean surface. Arrange a small amount of shredded lettuce, sliced cucumber, matchstick carrots, vermicelli noodles, mint leaves, cilantro leaves, and cooked shrimp (if using) in the center of the wrapper.
- Fold the bottom edge of the wrapper over the filling, then fold the sides towards the center. Roll tightly to enclose the filling completely.
- Repeat with the remaining wrappers and filling ingredients.
- Serve the spring rolls with hoisin sauce and sweet chili sauce for dipping, alongside the prepared dipping sauce.
