Ingredients
  

  • 10 spring roll wrappers
  • 1 cup shredded lettuce
  • 1 cup thinly sliced cucumber
  • 1 cup matchstick carrots
  • 1 cup cooked vermicelli noodles
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 cup cooked shrimp peeled and deveined (optional)
  • Hoisin sauce for serving
  • Sweet chili sauce for serving

Dipping Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon grated ginger
  • 1 tablespoon chopped green onions

Instructions
 

  • Prepare the dipping sauce by whisking together soy sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, and chopped green onions in a small bowl. Set aside.
  • Fill a shallow dish with warm water. Dip one spring roll wrapper into the water for about 15-20 seconds until it softens.
  • Lay the softened wrapper flat on a clean surface. Arrange a small amount of shredded lettuce, sliced cucumber, matchstick carrots, vermicelli noodles, mint leaves, cilantro leaves, and cooked shrimp (if using) in the center of the wrapper.
  • Fold the bottom edge of the wrapper over the filling, then fold the sides towards the center. Roll tightly to enclose the filling completely.
  • Repeat with the remaining wrappers and filling ingredients.
  • Serve the spring rolls with hoisin sauce and sweet chili sauce for dipping, alongside the prepared dipping sauce.
