  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1 cup cooked and crumbled bacon about 8-10 strips
  • 1 cup shredded cheddar cheese
  • 2 green onions finely chopped

  • Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  • In a large bowl, whisk together the all-purpose flour, cornmeal, baking powder, baking soda, salt, and black pepper.
  • In a separate bowl, whisk together the buttermilk, melted butter, and egg until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Gently fold in the crumbled bacon, shredded cheddar cheese, and chopped green onions into the batter.
  • Spoon the batter into the prepared muffin cups, filling each cup about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. The tops should be golden brown.
