- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup buttermilk
- 1/4 cup unsalted butter melted
- 1 large egg
- 1 cup cooked and crumbled bacon about 8-10 strips
- 1 cup shredded cheddar cheese
- 2 green onions finely chopped
Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
In a large bowl, whisk together the all-purpose flour, cornmeal, baking powder, baking soda, salt, and black pepper.
In a separate bowl, whisk together the buttermilk, melted butter, and egg until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Gently fold in the crumbled bacon, shredded cheddar cheese, and chopped green onions into the batter.
Spoon the batter into the prepared muffin cups, filling each cup about 2/3 full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. The tops should be golden brown.
Allow the bacon muffins to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
