  • 12 oz 340g pasta (such as penne or fusilli)
  • 1 lb 450g shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 onion finely chopped
  • 1 bell pepper diced
  • 1 cup cherry tomatoes halved
  • 1 cup tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or olive oil.
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, sauté until fragrant and onions are translucent.
  • Add diced bell pepper to the skillet and cook until softened.
  • Stir in the shrimp and cherry tomatoes, and cook until the shrimp turns pink and opaque.
