Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or olive oil.
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, sauté until fragrant and onions are translucent.
Add diced bell pepper to the skillet and cook until softened.
Stir in the shrimp and cherry tomatoes, and cook until the shrimp turns pink and opaque.
Pour in the tomato sauce, dried oregano, dried basil, salt, and pepper. Let the sauce simmer for a few minutes.
Add the cooked pasta to the skillet and toss until evenly coated with the sauce.
Transfer the pasta and shrimp mixture to the prepared baking dish. Sprinkle shredded mozzarella cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
